Consumers’ willingness to pay for fish products with health claim and environmental labels

Résumé

In this presentation, the consumer preferences will be presented for different fish alternative species, as well as different attributes, using a labelled choice experiment. We applied a labelled choice experiment (LCE) to investigate consumer demand and choice behaviour for fresh fish in a retail market hypothetical situation in five European countries: Italy, France, Spain, UK and Germany. The LCE was conducted for seven fish alternatives (i.e., cod, herring, seabass, seabream, salmon, trout and pangasius). Data for this study have to be collected in June 2017 through a nationwide online survey administered in the five countries by a third-party contractor using its consumer panel database. The survey questionnaire was developed for the WTP survey and revised based on input from qualitative analysis and pre-tests according to a previous qualitative study based on 100 face-to-face interviews to seafood consumers. This study will give an overview on the consumers’ preferences for fish products on representative samples in five European countries. We believe this presentation will promote a critical debate among agricultural and applied economists at the EAAE Conference by identifying these relevant attributes on a cross-country comparison base.
